- 1 medium zucchini, sliced into coins
- 3.5 ounces sliced portobello mushrooms

- 2 tablespoons no-salt Mexican seasoning OR 1 tablespoon chili powder, 1/2 tablespoon garlic powder and 1/2 tablespoon cumin (add more or less seasoning depending on how hot you like it)

3. Chickpea Curry with Cauliflower Rice
